Rainy day..

It’s HORRIBLE outside! Theo and I went to Tesco this morning for our weekly shop and it suddenly seems like Christmas is everywhere! Music, food, gifts, wrapping I love it! We decided to get in the mood and bought two of Tescos gorgeous poinsettia plants, at only £2.50 each they are a total bargain and guaranteed to last until Christmas. I decided I wanted to jazz them up a bit and with an IKEA tub, some string and left over orange and cinnamon from Halloween I think they turned out great! They aren’t a fragrant plant, so getting a little festive whiff from them is just a bonus!

     

   
I was also able to pick up the ingredients for my Christmas chutney. It’s best left for three to four weeks before eating, so I’m right on time. I love this recipe because it’s super simple and doesn’t take a lot of time. You also don’t have to be too precise. This is a tweaked recipe from Nigella herself *bows head in reverence*.

 
 
You need – 

Cooking apples (3)

An onion (a big one)

Apple Cider Vinegar (350mls)

Dried Cranberries (300g)

Caster Sugar (200g)

Ginger (1 tsp)

Turmeric (1 tsp)

Coriander (1 tsp)

Cumin (1 tsp)

Salt (1 tsp)

Basically just chuck everything except the Cider Vinegar into a big pot and give it a good mix. Then add the vinegar and bring it to a fast boil. After one minute turn down the heat and let it simmer gently uncovered for about 40 minutes or until it’s thick and jam like.

  
  
 
 
While this is bubbling away, you need to sterelise your jars. I use the little IKEA ones, they are a great size and have a plastic lid that screws super tight, which is perfect for this. To sterelise your jars, wash them in warm soapy water along with the lids. Then rinse and put on a baking tray in a hot oven for 15 minutes (not the lids). One you take them out be sure not to touch the inside of them to keep them sterile. Slowly spoon the hot chutney into the jars, filling them to the brim and leaving no space, then put the lid straight on. Let them cool at room temperature. It’s best if you can leave it a few weeks before you eat it, the flavour is really much better. Once you open it, keep it in the fridge and use within 3 days. This makes 5/6 good sized jars and is great with cold meats *dreams of Boxing Day sandwich*.

  
While I was filling the jars, I set Theo to work on his letter for Santa. Royal Mail have a service where you send your letter to Santa and receive a reply.

Letters have to be sent by the 6th of December. He’s decided that he’d like a ‘dinosaur egg with a mummy dinosaur and a daddy dinosaur and a baby dinosaur inside’. I hope Santa can find one!

  
I’ve been really looking forward to Christmas, I feel like my year so far has been grey and cold. I’ve been like a zombie for a lot of it so thoughts of twinkly lights, lit fires, Christmas music, cosy nights and lovely food are filling me with delight! Can’t wait to get our tree up next week and enjoy… tis the season to be jolly etc!
